Thanksgiving '08

So, first and for most we are so thankful for our wonderful family and friends. We really couldn't make it through life this happy without any of you. We hope everyone had a great Thanksgiving and we missed all of you that we couldn't be with. We went to The Farm (mom and Don's) and had a blast. I cooked for the first time and didn't do half bad. LOL moment, mama and I cooked the bird upside down, but whatever, it was still moist and yummy. The kids played til they pretty much just passed out and Ozzie loved all the animals. He wanted to chase the chickens and goats. Well, enjoy the pics and good luck to all through Dec. don't stress to much.

The best Sweet Potato Casserole ever!!!


Use this at Christmas!

3 large cooked mashed sweet potatoes
half cup of butter
1/4 cup milk
2 large eggs
1 cup sugar
1 teaspoon of vanilla extract
3 and a half cups mini-marshmallows

1st 3 ingredients mashed or put in the food processor
Add eggs, sugar, and vanilla and blend well
Pour into a greased baking dish
Cover and bake at 350 for 15 min.; uncover and spinkle with marshmallows. Bake, uncovered 20 more minutes or until marshmallows are toasted. Serve hot. Serves 8.

Surgery AGAIN?!!? :]

Yes, you read right. For the third time this year this little Holland family is dealing with surgery again. Mommy (amy) needed a new bladder! I won't go into to much detail because its weird and gross (TMI) but things were tightened, tacked and removed. I am a week out and things are going pretty good. Went to see grandparents today and Rose and I went to see High School Musical 3. It was diffantly to much but I can just rest it off tonight and tomorrow. It is a 4 week recovery so the prayers need to go to Christi and Brent the most. Thank you Jesus for them!!! Hope everyone Halloween was fun and all is well.
